Idi Irachi is a South Indian delicacy made from pounded and shredded dry buff meat popularly known as Unakka Irachi. Salt pickling the meat ensures it doesn’t get spoiled over time. The rich flavor attributes to the long process of sun drying and smoking it over wood furnace stoves over several days.
